WHITE BEAN STEW (LOUBIA)
WHITE BEAN STEW (LOUBIA) - for Dutch scroll down
Serves 2:
2 onions, finely chopped
3 cloves garlic, minced
2 large tomatoes, cut into small cubes
1 tsp coriander seeds
2 tsp cumin
1 tsp turmeric
1/2 tsp smoked paprika powder
Salt and freshly ground black pepper
50 ml water
1 jar white beans (220 g drained weight)
A handful of fresh coriander, finely chopped
Bread, for dipping
Method:
1. Heat a splash of olive oil in a frying pan or tagine and gently sauté the onions and garlic for about
3 minutes
2. Add the tomatoes, stir, cover, and let simmer for about 5 minutes until soft
3. Add the spices, season with salt and freshly ground black pepper, and stir well
4. Pour in the water, cover again, and let cook for another 5 minutes so the flavors can develop
5. Finally, add the beans and fresh coriander. Let everything warm through gently for, then enjoy!
Tear off a piece of bread and eat the loubia straight from the pan or tagine.
