TOFU AND LEEK
For two people
The sauce:
35 ml light soy sauce
20 ml dark soy sauce
15 ml mirin
20 ml oyster sauce
5 ml sesame oil
50 ml water
1.5 tsp cornstarch
Other ingredients:
2 slices ginger, cut into thin strips
2 cloves garlic, finely chopped
ó to 1 red chili, seeds removed and sliced into thin rings
2 star anise
1/2 to 2/3 leek, washed and finely sliced
300 g ready-to-eat fried tofu balls
75 g bean sprouts
Handful of fresh cilantro, finely chopped
Preparation:
1. Mix all ingredients for the sauce and set aside
2. Heat a splash of (olive) oil in a wok and briefly fry the ginger, garlic, chili and star anise for about 1
minute
3. Add the leek and stir-fry for about 2 minutes
4. Then pour in the sauce and stir well
5. Add the tofu to warm it through, then stir in the bean sprouts last
6. Remove the star anise before serving. Serve with rice, garnish with cilantro and optionally some
extra chili, and enjoy!
