QUICHE WITH GREEN ASPARAGUS
For one quiche:
250 to 300 g green asparagus, ends removed and halved
4 eggs
200 ml heavy cream
100 g ham, cut into strips
125 g grated cheese
Salt and freshly ground pepper
6 sheets of puff pastry
Preparation:
1. Preheat the oven to 180 degrees Celsius
2. Beat the eggs in a bowl, then add the cream and stir well
3. Then mix in the ham and cheese and season with salt and pepper
4. Grease the quiche tin, or line it with baking paper
5. Spread the puff pastry over the base and sides and prick holes in it with a fork
6. Spread the asparagus over the base (keep a few asparagus tips aside) and pour the cream
mixture over it. Distribute the remaining asparagus tips over the mixture and press lightly.
7. Bake the quiche for +/- 40 minutes until the filling is set and the top is nicely golden brown
8. Let the quiche cool for about 10 minutes and serve it on a nice board or cake stand
