CHICKEN CURRY SALAD
Serves 4:
600 g chicken thigh fillet, cut into cubes
1 small onion, finely chopped
1 stalk celery, trimmed (remove base and tough strings) and finely sliced
4–5 tbsp Greek yogurt
3 tbsp mayonnaise
3 tsp curry powder
Salt and freshly ground black pepper
4–6 leaves little gem lettuce
A handful of fresh parsley
Preparation:
1. Heat a splash of (olive) oil in a frying pan and cook the chicken until golden brown and fully
cooked. Season with salt and pepper, then set aside to cool.
2. Make a dressing with the Greek yogurt, mayonnaise, and curry powder. Add the chicken, onion,
and celery, and season to taste with extra salt and pepper if needed.
3. Fill a sandwich or a nice glass with some lettuce.
4. Spoon the chicken curry mixture on top.
5. Garnish with parsley and enjoy!
