This is a recipe of chef Gerard Wollerich, the owner of Michelin starred restaurant Wollerich in Sint-Oedenrode, the Netherlands.


White Asparagus – Egg – Flour – Egg Yolk – Nutmeg – Cream – Salt – Pepper


Start by preparing the asparagus cake, place 250gr of the white asparagus in a blender and add 100gr of cream, 1 egg and 40gr of flour to the blender with the asparagus and a bit of nutmeg.

Mix this the different ingredients in the blender and flavor the mixture with some salt and pepper.

Place the asparagus cake mix in a silicone mold and bake the cake for about 25 minutes on 160 degrees Celsius.

Continue with the egg yolk cream by mixing 3 egg yolks with 50gr of cream in a sauce pan. Heat the substance till 85 degrees Celsius, during this heating process you must keep stirring the mixture otherwise it will get too hot. put the cream in a pitting bag.
